It is always amazing to see what a chef can do with a restaurant - but there is only so much you can do with so many tables and guests to care for. Sometimes those creative juices are limited by ticket times, and the reality of running a kitchen. That is where the "Chef's Table" comes into play - like a private performance from your favorite artist, the chef's table concept exists for a lucky few to experience the very best of one's ability.
Chef Zach Scherer is no stranger to cooking at this level, having cut his teeth at some truly wonderful kitchens. Now, he finds himself leading the charge at Bello in Newport Beach. Learning from Chef/Owner Sandro Nardone, he now gets to present his skills at his own "Chef's Table." We sit down to discuss what this new venture means, how it came to be, and what inspires each dish.
