I've had a lot of chefs and various other professions on recently, all of whom I'm very humbled to have interviewed. He is one of the best in the area, and gives a great insight into what it's like to build out a bar program, how he selects spirits, and also why agave spirits are so mistreated. This interview also comes with information on a cool party trick you can use on friends to see if your tequila to mezcal of choice is chalked full of glycerine or not - I'm not joking
