#101 - Jeoffrey Offer and A Butcher's Dream House

When you open a new restaurant, you create more than just a menu - you create an entire experience for your guests. Moreover, you establish where the business falls within the hierarchy of other businesses concerning the said experience. Are you opening a casual burger joint or a white tablecloth dining room? Finding where a space fits in this spectrum is challenging, and it seems more and more that the middle of this space is left vacant. Butcher's House in Costa Mesa - a restaurant brasserie and bar - sits comfortably as a place that is both accessible and fantastic. Helmed by Chef Jeoffrey Offer, the restaurant is a modern French bistro specializing in dry-aged beef, beautiful wines, and more. We sit down to discuss his journey to this point, growing up as a butcher's son, and why some people just shouldn't go out to eat.

Enjoy!
